Just for ease-of-copying, the questions:
What sorts of non-lovemaking activities and such did your characters bond over?
What sorts of non-lovemaking activities do they do together?

What sorts of non-lovemaking activities and such did your characters bond over?
Scholarship, magic, and planning world domination. A perfect recipe for any couple.
What sorts of non-lovemaking activities do they do together?
Er... see above?
What kinds of things do they talk about when they're together?
...Are ye deaf?
What dreams and goals do they share?
...Not to suggest that Grindeldore is a one-note pairing, but, um...
What dreams and goals do they have that they do not share?
Albus favors a benevolent, nonviolent takeover. Gellert favors the brute-force route. ...This is part of why this pairing would be facing quite a bit of "emotional journeys" and "conflict resolution" if it had gone on for longer.
Aside from that, I can't think of much, since world domination, becoming the Greatest Wizards ever, and the like take up most of one's time. Ah... perhaps Albus fancying himself a bit more of a style expert than Gellert counts?
How many children does each partner want? Have they discussed this? If not, why?
...I haven't the slightest. I think Albus isn't keen on having kids so much as observing them from a safe distance, due to dealing with his younger siblings for too long, and Gellert doesn't care either way. At any rate, no, it hasn't come up, since WORLD CONQUEST!!!1! comes first. (For The Greater Good, of course.)
What other plans do they have for the future? Which ones have they discussed? Why and/or why not?
...*dumbfounded pointing upwards at the answer to the first question* Aside from that, there's the fine details of where they start their grand campaign and how they do it, which they obviously have discussed. There's also the rehabilitating-Ariana plan, which is mostly in Gellert's hands. Albus's main concern is having it be successful and not outright harmful to her.
What are the most difficult situations they have faced together so far? How did they overcome them?
Um, can I just assume this is in an AU where Gellert did not Cruciate Aberforth? D: Because the answer is hideously clear in that case.
In any other case... Ah, I suppose dealing with life outside of England, since my fanon is that Gellert wasn't on good terms with his parents at all, and bringing home two English half-bloods and continuing his crazy schemes was pushing matters much too far... so they wound up having to find themselves a new residence in a cheap and run-down district of Wizarding Berlin, all while keeping Ariana under wraps. Consider said district the German Knockturn Alley to get a good idea of what they had to handle. Beyond that... I never did enough worldbuilding to determine where they'd run into the most difficulty, sorry.
What are some of their best memories together so far?
Staring into each others' eyes and telling themselves how wonderful they were.

More seriously... ah, bugger, I can't say "refer to first question" AGAIN, can I? Well - probably meeting each other, because-
[Grindelwald] would be as dazzled by Dumbledore as Dumbledore was by him, because he would see in Dumbledore, 'My God, I never knew there was someone as brilliant as me, as talented as me, as powerful as me. Together, we are unstoppable!' So I think he would take anything from Dumbledore to have him on his side.
The interviews are good for SOMETHING. >:D
What things do they do that get on each others' nerves?
Gellert sees Albus as somewhat... squeamish. And unwilling to acknowledge the existence of things that are unpleasant. And prone to argue about the morality of things that don't faze Gellert in the slightest.
On the more minor side, he can't understand Albus's infatuation with candy, particularly Lemon Drops. And he has, er, a dubious opinion of some of Albus's more flamboyant clothing choices.Him and everybody but Albus.
Albus wishes Gellert would be more tolerant towards Aberforth, have a tad more impulse control, and generally consider things carefully before rushing into them. (It ought to be noted that the last part, though a legitimate point, is one of Albus's favored avoidance techniques, via "considering" the matter for such a long time that he never does anything at all. And Gellert notices this. This is part of why Gellert doesn't pay terribly much attention to that advice.)
On the darker side, he gets solidly unnerved by some of Gellert's "jokes", really does not like Gellert's ideas regarding overwhelming force over necessary force, and isn't certain quite how much of what Gellert says regarding their future plans is hyperbole and rhetoric and how much of it is Gellert's genuine beliefs. He, er, of course handles these concerns in a most rational and mature manner...

On the more minor side, he firmly maintains pride in his fashion sense.

In canon, well, it wound up with Gellert getting locked in solitary confinement for half a century...
In an AU? The details of their plans, the level of "necessary" force, and other such things. More benevolently, they probably debate the fine details of magical theory.
How do they reconcile after arguments or fights?
In canon? *angsty sigh*
In an AU? Well, I suppose they debate the matter like rational adults, and [redacted] [redacted] [redacted] with socks and [redacted] via misuse of wands and [redacted] with their [redacted], switching off occasionally to [redacted], [redacted], and vigorously [redacted]...
How do they each react when the other is in pain or is troubled? What do they do to help the other?
Well, they comfort each other, and... sorry, I'm not good at putting it into words. It's... more of a quiet thing, I suppose. Just... understanding, and knowing that the other understands that he understands. And being there for the other. ...They both get highly withdrawn when in pain and do not want to talk about it.
What is the biggest potential threat to their relationship? What is the most likely threat?
Same thing - the little issue of the differences to which Albus closes his eyes blowing up and coming to the fore in the worst way possible. Also known as "what happened in canon".
What would each partner be willing to change about xirself for the other? What wouldn't they be willing to change for each other?
What I'd like to change about this question is the need for a gender-neutral pronoun in the first part, then dropping it in the second part. It's not even parallel structure. I'd phrase it instead as "What would they be willing to change about themselves for each other? What wouldn't they be willing to change for each other?"
More seriously, they're both very stubborn, but they're both very in love. ...They'd never change to each others' Optimal Image of the other, but they'd hopefully move away from their respective crippling-hesitancy/brainless-recklessness and squeamish-denial/arrogant-callousness, issues. Well, they have to. Not just for each others' sakes, but for their own sakes, and for the sake of their dreams of reforming the world.
(And if they don't? Why, then, you get canon... *cringes*)
